At the moment I’m having to keep things simple, and I’m giving you my everyday recipes. These are what I tend to eat most days, and what I adapt for my family. This one is no exception. Just a simple, boiled egg and avocado on Sourdough with Goats Cheese. This is an awesome and adaptable recipe as I serve the boiled egg and avocado on toast to my son, then add goats cheese, and pepper for myself and my husband. For the avocado I always add the juice (and sometimes zest) of a lime, with some flat leaf parsley chopped in. I’ve been into fiery foods lately, and would add a dash of tabasco or sprinkle some chilli flakes over the top. You can absolutely make this your own – add some poppy seeds; add a little garlic mayo, zest over a lime, make the eggs runny or hard. The possibilities are endless.

Ingredients (for 1):
1 Egg
1/2 Avocado
1/2 Lime, juice of
1 tsp Fresh Flat Leaf Parsley
1 Slice of toasted Sourdough
1 tbsp Goats Cheese
Pinch of Pepper
Pinch of Salt (optional)
Method:
- Boil the egg for as long as you need. 5 minutes soft, 6 minutes semi-soft and 7 minutes hard boiled. Once cool enough, peel off the shell and chopped into four rounds.
- Mix the avocado with the lime juice, salt (if using) and parsley and mash together.
- Spread the avocado on the toast and top with the goats cheese, egg and finish with pepper.
