Good Evening,
Today we went for a really lovely hike in Hindhead, and we needed a fast and filling breakfast before we headed out. I saw this recipe on Nadiya Hussain’s ‘Family Favourites’ show a couple of weeks ago and I just had to try it out. Nadiya is just fabulous and she makes insanely good recipes. When she won the Great British Bake off a couple of years ago, I cried in happiness for her as she totally deserved it and was so lovely and such a gracious winner. I’m really looking forward to the Bake Off this year. It’s starting next week!!
I’ve made a couple of small adjustments to the recipe as I didn’t want to give my son flaked almonds as I wasn’t sure if we’d manage them. He currently seems to just inhale his food, and ends up gagging a lot, so I’m trying to go with it and just adapt the recipes slightly for him until he goes back to chewing 🙂

Ingredients:
425ml tin Puréed Mango
1 Lime, zest and juice
6 Mint Leaves, shredded
200ml Almond Milk
150g Rolled Oats
Method:Â
- Combine all of the ingredients and stir until completely mixed through. If you are using a bowl, cover tightly with clingfilm and refrigerate overnight.
- Top with anything you like. For this one I topped it with mango and coconut chunks with coconut shavings (although I didn’t serve these to my son).
