My baby absolutely loves sweet potato. This recipe is super simple, especially as I cooked it in the microwave, although I’ve got to say that I do prefer a baked potato in the oven. However today was not one of those days that I had time to bake in the oven, and I wanted my little man to have a quick and easy meal. These are so nice I eat them myself, and you can stuff them full of anything you may have in the fridge.

1 Sweet Potato
Small handful of grated Cheddar
Pepper, to taste (optional)
- Prick the potato all over, then put in the microwave and cook on full for 5 minutes. Carefully take it out and cut in two. Return to the microwave and cook on full for another 5 minutes.
- Carefully scoop out the majority of the potato, leaving a little around the edges. Mash the potato with the cheddar, then put it back into the shells. Add the broccoli and serve.
