I have been really short on time lately as I am setting up a baby weaning business, and I need to make fast, healthy recipes for my family. This one is no exception. It is really tasty, and takes about 2 minutes to make! We all loved it for breakfast, or you could make it for pudding. I was talking to a lovely friend today who was telling me that she sometimes feel stuck for ideas and time for breakfast, so I’m hoping this one will be perfect for her!

Ingredients:
Handful of blueberries
200ml Milk (any type – diary or non-dairy)
4 tbsp Chia Seeds
1 tbsp Maple Syrup (optional)
100g Greek Yoghurt
Coconut shavings (sprinkle)
Blueberries (small handful, to top)
Method:
- Squeeze the blueberries until the juice runs out, then mix it with the milk. You can add the squished blueberries in if you want, but I just ate mine!
- Add the chia seeds and maple syrup, and stir. Refrigerate overnight.
- Add the greek yoghurt and top with coconut and blueberries.
