Today I’m making more finger food for my baby as I want to keep his foods as varied as possible. This is also a great recipe for any courgettes you have lying in your fridge looking a little sorry for themselves. Don’t throw them out! Just make these instead.
These are great for babies and children, however if you are making for these adults (or grown up kids), the whole process can be sped up as you can add 2 teaspoons of salt to the grated courgettes at the start to draw out all of the moisture and leave them to drain for an hour.
I served these with mashed avocado and homemade hummus.

Ingredients:
450g (around 2) Courgettes, coarsely grated
1 tbsp. Flour
1 Egg
3 Chopped Spring onions
1Lemon, zest of
1 tbsp. Mint, chopped
1 tsp Vegetable Oil
Method:
- Leave the grated courgettes to drain into a bowl for around 3 hours (if not using salt to draw out the water). Pat them dry with kitchen towel.
- Mix the flour, egg, spring onions, lemon and mint together, and add the courgettes.
- Divide the mixture into 4, for large fritters, or 6-8 small fritters. Heat the oil in a pan, and add the fritters. Once golden brown, turn to the other side.
i guess the lemon and mint zest makes them interesting for the bigger kids as well. nicely done !
