Savoury Pancakes

As it is a Sunday, I thought I’d spend some time slowly brewing my favourite tea at the moment; sticky honey chai, from T2. It takes time; slowly warming the milk and chai together, and decanting it into my favourite teapot. The teapot was a present we bought for ourselves when we were on our honeymoon in Australia a couple of years ago. We met the shopkeeper who was this larger than life woman who we ended up chatting to for almost an hour, and every time I get the teapot out it makes me smile to think about her, and our wonderful time on honeymoon.

As I’d decided to make a sweet drink, I thought I’d opt for some savoury pancakes. I love these. The flavour from the sundried tomatoes can be a little salty, so if you’d like, you could add some cherry tomatoes with the seeds out instead. I gave these to my little man and he absolutely loved them! I drizzled them on top with my basil pesto that I made during the week, and added goats cheese for James and I. This is the perfect breakfast to start what will hopefully be a perfect day.

Ingredients (serves 3):

90g Plain Flour
3/4 tsp Bicarbonate of Soda
1/2 Medium Free Range Egg, Beaten
160ml Buttermilk
35g Sundried Tomatoes, finely chopped
1/2 tsp Oregano
Olive oil or Sunflower Oil Spray, or tsp of either
Pesto, to serve
Goats Cheese, to serve


  1. Sift the flour and bicarbonate of soda together into a large bowl. Make a well in the centre, then add in the egg and buttermilk. Stir until smooth using a balloon whisk. Add in the tomatoes and oregano, and mix together.
  2. Heat a large non-stick frying pan over a medium heat, and spray with the oil. Spoon heaped tablespoons of the mixture on to the pan. Once you see bubbles forming on top (usually bout 1-2 minutes), flip onto the other side.
  3. Keep doing this in batches until all of the mixture is gone.
  4. Plate up, and drizzle over the pesto and add goats cheese if using.
