I’m sorry I didn’t manage to get a blog up yesterday – my laptop is giving up the ghost very slowly and I need to buy a new one. I was sat here for a very frustrating 2 hours with a major buffer face on, and in the end I had to admit defeat. Thankfully, today it has worked, although I have been sat here for 2 hours again and haven’t been able to edit my photos as I would have liked! Please bear with me. I’m hoping to get a new one by next week. I just have to wait for payday first! 🙂
Anyway, I hope you have had a wonderful day. I decided to make some pesto today for my little man, as he has not yet tried it. I can say that it is an absolute hit! We had some for lunch with pasta, and I have batch made a lot of it to freeze in cubes to use as and when I need it. I like to have pesto with baked salmon, roasted new potatoes and salad. Yum! This recipe will make around 250ml of pesto.

Ingredients:
100g Basil
100ml Olive Oil
40g pine nuts, toasted
1 minced clove of Garlic
30g grated Parmesan
Method:
- Toast the pine nuts in a dry pan. Be careful they don’t catch and check them regularly.
- Add the rest of the ingredients to a blender. Add the pine nuts and blend until smooth. If you want it a little looser, add a drizzle more of olive oil.
