Every Monday I run a meet up for mums in the local area where we get together, chat and drink coffee. I’ve been going since my little man was 5 weeks old, and I took over running it from another Mum when her little one became bigger and it was difficult for her to commit to. I’ve met some amazing mums there. Each week there’s always a new face, with a new baby, and it’s such a pleasure watching them grow. But at the moment, its just great to sit in a bar with air-con to escape this heat!! Today its been super hot again, and this evening we just needed a salad!! My little man had some of my Thai vegetable curry that I made the other day, as this one would be a bit too challenging for him to try and eat at this stage.

Ingredients (serves 2):
50g Mixed Quinoa
2 small Oranges
15g Parsley, chopped (save a little for decoration)
1/2 Pomegranate, seeds
20g Feta, chopped
5g Pistachios, chopped
Half a lemon
Olive Oil (if required)
1 tsp Light Soy Sauce
1 small Garlic Clove, minced
1 tbsp. Tahini
2 tsp White Wine Vinegar
- Cook the quinoa according to the packet instructions.
- Peel the carrots, and cut into ribbons using the peeler and add to a bowl. Slice the oranges into rounds and add to the bowl. Also add the parsley, feta and pomegranate seeds and mix them all through with the cooked quinoa.
- Add all of the dressing ingredients together in a dressing jar and give them a good shake. You may need to add a little extra white wine vinegar if it is too thick.
- Serve the salad with a the dressing separate, and squeeze over the lemon juice. Scatter the pistachios over the top. I also like to drizzle over a smidge of olive oil, but feel free to leave this out.
