Omelette, kale, green peppers and Rye Bread toast. I found out today that my baby loves kale! I was quite surprised, but he loves anything green. His absolute favourite food appears to be broccoli. I wonder how long this will last 🤔. This yummy breakfast went down a treat this morning, and it’s a great way to get the greens in early 💪.
My baby had some omelette, which was well cooked all the way through, with a little kale and some peppers.
Ingredients (serves 1):
2 Eggs
25g Kale
1 Pepper
1 slice of Rye Bread
Butter
2 Tbsp Olive Oil
Half a lime
Sprinkle of cheddar cheese
Pinch of fresh chives
Method:
Heat 1 tbsp of olive oil in a frying pan on a medium heat, beat the eggs and add to the pan. Meanwhile massage the kale with the remaining oil, and squeeze over the lime juice when soft. Cook the omelette to your liking, sprinkle on the cheese and chives, fold over and plate. With the frying pan still hot, add the peppers and stir fry for a couple of minutes. Make the toast and slather on the butter. Add everything to the plate, season with salt and pepper, and enjoy!
