My husband has been a little under the weather lately, which could be due to working long hours, and having a 6 month old who likes to mix up the sleeping habits! Some nights he likes us to know that he’s still there every hour! Therefore, I’ve been trying to add in lots of vitamins and nourishment to our diet. This is a yummy bowl of goodness, gets in lots of fruits and good carbs in one go, and just makes me feel better.
I use all frozen berry’s for this bowl, and I just take out a few extra of the blueberry’s to defrost, squash, and mix in with some porridge for my baby. He loves blueberry’s but I’m not so keen on the mess!
Recipe (serves 2):
400g blueberry’s
4 heaped tablespoons of rolled oats
400ml Almond Milk
1 banana
2 teaspoons of cinnamon
2 tablespoons of desiccated coconut
6 Frozen Strawberries
6 Frozen Blackberries
Method:
Add the blueberry’s, oats, almond milk, banana and cinnamon to a blender and blend until smooth. Pour into a bowl and add the desiccated coconut, strawberries and blackberries on top.
